Almond Milk
from our book Homemade Vegan Cheese, Yoghurt and Milk
Ingredients
Makes 1 litre
100g almonds
1 litre water
nut milk bag or cottton cloth
You might also need a high powered blender.
- Soak the almonds overnight
- The next day, rinse them and blitz with a litre of water in a high powered blender for about a minute. If you would like the drink to be sweet, add two or three stoned dates before blitzing.
- Strain the liquid through the nut milk bag or muslin, pour into a bottle and store in the fridge for two to three days. If the weather is particularly hot, it may only keep until the next day..
Cashew Milk
Ingredients
Makes 1 litre
80g Cashew Nuts
1 litre water
milk bag or cotton cloth
- Soak the cashew nuts overnight
- The next morning, rinse them and blitz with a litre of water in a high powered blender for about one minute.
- Pour the liquid into a muslin cloth or nut milk bag, allow to drain and squeeze out the cashew mixture.
- Pour the liquid into a bottle and store in the fridge. Shake the milk well before use.
- This cashew milk can be kept in the fridge for two to three days.
