Chicken Focaccia
Seves 4 as a main course, ready in 30 minutes
4 chicken thighs boned
salt
1 head cos lettuce
2 slices parma ham
8 cherry tomatoes
100g mayonnaise
grated zest 1 lemon
freshly ground pepper
1tsp sweet paprike
1 focaccia
Lightly salt the thighs and leave to stand for 5 minutes. Wash the lettuce, shake dry and tear the leaves into pieces.
Pat the thighs dry and cook over a direct heat on the barbeque or at 180°C for 10-15 minutes, turning over several times. Cut the meat into slices. Place the ham slices on the barbeque warming rack to dry and crisp.
Halve the tomatoes (squeeze the seeds into the mayonnaise) and cut into thin strips. Stir the lemon zest into the mayonaise and season with salt, pepper and the paprika.
Cut the focaccia into serving portions and spread thinly with the mayonnaise. Top with lettuce, tomato strips and chicken slices. Drizzle the meat with the remainder of the mayonnaise and garnish with crispy ham.
