Quesadilla Waffles

QUESADILLA
WAFFLES

MAKES 4 SERVINGS
COOKING TIME: 3 HOURS

Ingredients

1 Spanish onion
Salt, freshly ground pepper
1 egg
4 sheets filo pastry
300 g Cheddar cheese
1 raw chorizo sausage

Instructions

1. Cook the unpeeled onion for 2 hours in the
barbecue at 150°C until it becomes tender and
sweet. Peel and purée the onion, and season it
with salt and pepper.
2. Beat the egg. Fold the pastry sheets into squares a
quarter of their original size so that they fit in a
waffle iron.
3. Grate the cheese. Mix the puréed onion with half
of the cheese and spread the mixture over two
folded pastry squares. Cut the chorizo into about
3-mm-thick slices and cover the onion and cheese
mixture with them. Spread the remaining cheese
over the top. Spread beaten egg over the edges of
the pastry squares (see also page 183) and cover
each of them with another square. Press firmly on
the edges.
4. Place the first quesadilla in the waffle iron, close
and cook indirectly in the barbecue for 20 minutes
at 180°C, turning it over twice. To serve, take the
quesadilla out of the waffle iron and cut in half
diagonally. Do the same with the second
quesadilla.
