Recipe of the Week – Stewed Apple Porridge

It’s World Porridge Day! To celebrate we have taken a simple recipe from Vegan Camper Van Cooking and made it our recipe of the week.

 

Stewed Apple Porridge

SERVES 2
For the porridge
120 g oats of your choice
350 ml oat milk
1½ tbsp apple concentrate (or other liquid sweetener)
½ tsp ground cinnamon
1 pinch salt

For the stewed apple
2 small tart apples
1 tbsp rapeseed oil
3 tbsp apple purée
1 handful raisins
1 tsp ground cinnamon
2 tsp apple concentrate (or other liquid sweetener)

In a saucepan, bring the oats to the boil with the remaining porridge ingredients on a medium heat while stirring constantly. Then turn off the heat, cover with a lid and leave to stand.

In the meantime, core, finely dice and sauté the apples in a second saucepan with the remaining ingredients until soft.

Briefly reheat the porridge to the desired consistency and divide into two bowls. Spread the stewed apple over the porridge and serve hot. It can be enjoyed with mulberries (or other dried berries), nut butter or other toppings of your choice.
