Who fancies a nice dessert to end the week, this week we are showcasing ‘Vanilla Rice Pudding’ (Risogalo me Vanilla) from Flavours of Greece’ by Rosemary Barron. Hope you enjoy!
The enticing moist and creamy rice puddings of Greece, never thick or overly sweet, bear no resemblance to any versions remembered from childhood. Greeks enjoy them as a snack as well as a satisfying end to a meal and this vanilla-flavoured pudding is one of the most popular. Other traditional flavourings are mastic, lemon, and orange.
Serves 6
175 g/6 oz pudding or short-grain rice
700 ml/11/4 pints milk
75 g/3 oz plus 1 tablespoon caster sugar or vanilla sugar (page 00), or more to taste
1 cm/½ inch strip of orange zest
Pinch of salt
1 tablespoon unsalted butter
1 egg
½ teaspoon vanilla extract, or to taste
1 tablespoon fresh lemon juice, or more to taste
75 ml/3 fl oz Rich Cream (without crust, page 00) or 115 ml/4 fl oz double cream
For serving
Ground cinnamon
Sifted icing sugar
Place the rice in boiling water and leave for 5 seconds; drain, and rinse. Bring the milk almost to a boil in a heavy saucepan, and stir in the rice, the 75 g/3 oz sugar, the orange zest, salt, and butter. Reduce the heat to very low and simmer uncovered, stirring occasionally to prevent sticking, for 1 hour, or until thick and creamy. Remove from the heat and set aside.
Whisk together the egg, vanilla, lemon juice, and remaining 1 tablespoon sugar until pale and thick, about 2 minutes. Remove the orange zest from the rice mixture and stir half the rice into the egg mixture. Return this to the saucepan and stir to combine. Gently cook over low heat, stirring well, for 2 minutes. Stir in the Rich Cream and add more sugar or lemon juice if desired. (If using double cream, beat until slightly thickened, then stir into rice mixture.) Divide between individual dishes and chill.
To serve, liberally dust with the cinnamon and icing sugar.
