Lemon Gingerade
Makes 500ml
Preparation Time: 15 minutes
Ingredients
100g root ginger
2 untreated lemons
100g raw cane sugar
- Peel the ginger. Rinse the lemons under hot water. Cut the ginger and lemons into coarse chunks and blend with 250ml of water in a blender.
- Combine the sugar with 100ml water in a small saucepan and cook to a syrup over a low heat while stirring constantly. Once the sugar has dissolved, wrap the lemon and ginger mixture in a clean cloth and squeeze the liquid into the syrup. Leave to cool.
- Dilute with soda water and serve.
Serving tip: Serve with finely chopped mint.
Spice Cola
Makes about 500ml
Preparation time: 45 minutes
Ingredients
2 untreated oranges
2 untreated limes
3cm root ginger
4cm vanilla pod
1 point star anise
2 cloves
1/2 tsp ground cardamom
1 pinch ground cinnamon
200g raw cane sugar
- For the spice liquid, wash the oranges and limes under hot water. Remove the zest with a vegetable peeler, finely chop and put into a small saucepan. Squeeze the juice and top up with 500ml of water. Peel and finely slice the ginger. Split the vanilla pod and crush the star anise point. Combine everything with the cloves, cardamom, cinnamon and orange and lime juice, bring to the boil and simmer for 15 minutes.
- In the meantime, put the sugar in another saucepan over a medium heat and slowly caramelise, stirring constantly until it is liquid and slightly brownish. Remove from the heat. Strain the spice liquid through a sieve into the caramelised sugar. Do this carefully because it will splash and foam up. Continue to stir until the sugar is completely dissolved.
- Fill a clean, swing-top glass bottle and leave to cool. Dilute with soda water and serve.
