The 1st of July marks International Fruit Day. So why not try this delicious recipe from Buddha Bowls?
Purple Superfood Bowl
FOR THE SMOOTHIE
- 1 ripe mango (about 380 g)
- 60 g each frozen raspberries and blackberries
- 100 g frozen açai purée (from organic food shops)
- Juice of 1 orange
FOR THE TOPPING
- 125 g blueberries
- 1 small banana
- 2 tbsp dried cranberries
- 2 tbsp goji berries
Peel the mango and cut away the flesh from around the stone. Coarsely dice and combine with the frozen berries in a blender. Break up the frozen açai purée and add it to the blender with the orange juice. Blend until very smooth.
In the meantime, prepare the topping. Wash the blueberries and pat dry with kitchen paper. Peel and slice the banana.
Fill bowls with the smoothie. Top with banana slices, blueberries, cranberries and goji berries.
