British Tomato Fortnight – Tomato and Pepper Relish

Tomato and Pepper Relish

Makes 450 g
Preparation time: 50 minutes

INGREDIENTS
400 g tomatoes
1 yellow pepper
1 onion
1 clove garlic
2 tbsp olive oil
1 tbsp tomato purée
2 tsp ground ginger
25 ml red wine
2 tsp honey or agave syrup
salt
freshly ground pepper

1. Wash the tomatoes and the pepper. Finely dice the tomatoes. Remove the seeds from the pepper and also finely dice. Peel and finely chop the onion and garlic.

2. Heat the olive oil in a small saucepan. Sweat the onion and garlic in the oil. Incorporate the tomato purée and ground ginger, brown for a few minutes, and then deglaze with the red wine. Add the diced tomatoes and pepper together with the honey or agave syrup. Cook over a medium heat for 40 minutes, stirring often. Season with salt and pepper.

TIP: If you want the sauce chunkier and hotter, don’t strain it. This hot sauce can keep for a few weeks in the refrigerator.
