Today’s recipe is from Le Cordon Bleu Bakery School and is something bit different to your average sandwich!
Vegetarian Open Sandwich with Avocado, Horseradish, Celery and Granny Smith Apple
MAKES 20 OPEN SANDWICHES
Preparation: 30 mins
100 g horseradish cream
300 g fromage frais, beaten
4 slices seeded bread
2 lemons
2 avocados, thinly sliced
2 Granny Smith apples, thinly sliced
4 stalks celery heart, thinly sliced
200 g walnuts, lightly roasted

• Whisk together the horseradish cream and fromage frais in a mixing bowl. Fill a piping bag fitted with a no. 10 fluted
nozzle and pipe small dots on to the bread slices.
• Squeeze lemon juice over the avocado slices. Cut the apple into discs, then squeeze lemon juice over them.
• Top each slice of bread with the slices from half an avocado and a few apple discs. Add the slices from one stalk of
celery and a few roasted walnuts. Season with salt and pepper. Cut each slice of bread into five pieces.
