British Sandwich Week – Crispy Crete Sandwich

Taken fromย Veggie Fast Food Whilst not a British sandwich, this delicious sandwich has a lot of Mediterranean flair with the unbeatable duo of feta cheese and olives.

Crispy Crete Sandwich

Makes 4
Preparation time: 45 minutes

4 eggs
12 tbsp flour
160 g dry breadcrumbs
2 (150 g) pieces feta cheese
16 cherry tomatoes
1 yellow pepper
160 g assorted pitted olives
1 serving tzatziki
1 bunch chives
6 tbsp olive oil
1 flatbread
12 butterhead lettuce leaves

1. Beat the eggs with a whisk in a shallow bowl. Prepare the flour and breadcrumbs on separate plates. Cut each piece of feta in half across, and again lengthwise. Dredge each piece in flour, dip in the egg, and then dredge in the breadcrumbs. Set aside the crumbed feta in the refrigerator.

2. In the meantime, wash and halve the cherry tomatoes. Wash the pepper, remove the ribs, stem and seeds, and cut into strips. Finely chop the olives and mix with the tzatziki. Wash, shake dry and finely chop the chives.

3. Take the crumbed feta pieces out of the refrigerator. Heat the olive oil in a frying pan, and fry the feta pieces on both sides until golden. Cut the flatbread into quarters. Cut in half through the middle and fill with the lettuce leaves, yellow pepper, feta, cherry tomatoes and chives. Drizzle with the tzatziki and serve.
